Roasted Vegetable Cilantro Pasta with Lime
Ingredients
- Your favorite pasta
- Broccoli
- Onions
- Carrots
- Cauliflower
- Mushrooms
- Sweet corn
- Jalapeños
- Squash
- Tomatoes
- Celery
- One roasted green bell pepper
- Two roasted garlic cloves
- Handful of cilantro
- 1-2 limes
- 1 tablespoon agave
- Pepper
- Basil (optional)
- Salt
- 1/2 tablespoon olive oil
Preparation
Cook your favorite pasta.
Roast or bake the vegetables: broccoli, onions, carrots, cauliflower, mushrooms, sweet corn, jalapeños, squash, tomatoes, and celery.
In a blender, add one roasted green bell pepper, 2 roasted garlic cloves, a handful of cilantro, 1-2 limes, 1 tablespoon of agave, pepper, basil (optional), salt, and 1/2 tablespoon olive oil.
Enjoy warm.
