Roasted Vegetable Cilantro Pasta with Lime

Ingredients

  • Your favorite pasta
  • Broccoli
  • Onions
  • Carrots
  • Cauliflower
  • Mushrooms
  • Sweet corn
  • Jalapeños
  • Squash
  • Tomatoes
  • Celery
  • One roasted green bell pepper
  • Two roasted garlic cloves
  • Handful of cilantro
  • 1-2 limes
  • 1 tablespoon agave
  • Pepper
  • Basil (optional)
  • Salt
  • 1/2 tablespoon olive oil

Preparation

  1. Cook your favorite pasta.

  2. Roast or bake the vegetables: broccoli, onions, carrots, cauliflower, mushrooms, sweet corn, jalapeños, squash, tomatoes, and celery.

  3. In a blender, add one roasted green bell pepper, 2 roasted garlic cloves, a handful of cilantro, 1-2 limes, 1 tablespoon of agave, pepper, basil (optional), salt, and 1/2 tablespoon olive oil.

  4. Enjoy warm.
