Cabbage Pasta with Thyme Roasted Mushrooms

Ingredients

  • 200g Cabbage
  • 100g Pasta of choice
  • 100g Mushrooms
  • Handful of Thyme leaves
  • 3 tablespoons of Olive Oil
  • Salt and pepper to taste
  • Fresh lime juice

Preparation

  1. Cook the pasta.

  2. Wash and chop the cabbage into long, thin slices.

  3. Add the cabbage to the pasta during the last 2 minutes of cooking.

  4. Wash and chop the mushrooms.

  5. Heat olive oil in a pan and cook the mushrooms with fresh thyme.

  6. Season with salt and pepper.

  7. Mix everything together and serve with a hint of fresh lime juice.
