Roasted Veggie Cilantro Pasta Dish

Ingredients

  • Pasta (any type)
  • Broccoli
  • Onions
  • Carrots
  • Cauliflower
  • Mushrooms
  • Sweet corn
  • Jalapeños
  • Squash
  • Tomatoes
  • Celery
  • Green bell pepper
  • Garlic cloves
  • Cilantro
  • Limes
  • Agave
  • Pepper
  • Basil
  • Salt
  • Olive oil

Preparation

  1. Cook your favorite pasta.

  2. Roast or bake the vegetables: broccoli, onions, carrots, cauliflower, mushrooms, sweet corn, jalapeños, squash, tomatoes, and celery.

  3. In a blender, add one roasted green bell pepper, 2 roasted garlic cloves, a handful of cilantro, 1-2 limes, 1 tablespoon of agave (or more for sweetness), pepper, basil (optional), salt, and 1/2 tablespoon olive oil (optional).

  4. Enjoy warm by combining with the cooked pasta and roasted vegetables.
