Roasted Veggie Cilantro Pasta Dish

- Pasta (any type)
- Broccoli
- Onions
- Carrots
- Cauliflower
- Mushrooms
- Sweet corn
- Jalapeños
- Squash
- Tomatoes
- Celery
- Green bell pepper
- Garlic cloves
- Cilantro
- Limes
- Agave
- Pepper
- Basil
- Salt
- Olive oil
Preparation
Cook your favorite pasta.
Roast or bake the vegetables: broccoli, onions, carrots, cauliflower, mushrooms, sweet corn, jalapeños, squash, tomatoes, and celery.
In a blender, add one roasted green bell pepper, 2 roasted garlic cloves, a handful of cilantro, 1-2 limes, 1 tablespoon of agave (or more for sweetness), pepper, basil (optional), salt, and 1/2 tablespoon olive oil (optional).
Enjoy warm by combining with the cooked pasta and roasted vegetables.
