Spaghetti with Eggplant, Garlic, and Herbs
Ingredients
- 100g pasta
- Handful Basil
- Handful Parsley
- 2 shallots
- 3 garlic cloves
- Olive oil
- Salt and pepper
- 2tb tomato puree
- 6 cherry tomatoes
- 1 eggplant
Preparation
Cook the pasta
Chop the eggplant into cubes
Chop basil and parsley
Chop the shallots and garlic
Fry garlic and shallots in olive oil
When golden add the eggplant
Add salt and pepper
Chop the tomatoes in halves
Add to the eggplant
in 1-2 cups of the pasta water
Add in the tomato puree
Add in more pasta water if needed
Mix in parsley and basil
