Spaghetti with Eggplant, Garlic, and Herbs

Ingredients

  • 100g pasta
  • Handful Basil
  • Handful Parsley
  • 2 shallots
  • 3 garlic cloves
  • Olive oil
  • Salt and pepper
  • 2tb tomato puree
  • 6 cherry tomatoes
  • 1 eggplant

Preparation

  1. Cook the pasta

  2. Chop the eggplant into cubes

  3. Chop basil and parsley

  4. Chop the shallots and garlic

  5. Fry garlic and shallots in olive oil

  6. When golden add the eggplant

  7. Add salt and pepper

  8. Chop the tomatoes in halves

  9. Add to the eggplant

  10. in 1-2 cups of the pasta water

  11. Add in the tomato puree

  12. Add in more pasta water if needed

  13. Mix in parsley and basil
