Homemade Simple Tomato Pasta with Fresh Herbs
Ingredients
- Olive oil (enough to cover the bottom of the pan)
- 3 big cloves of garlic, minced
- 2 small chillies, sliced
- 350g cherry tomatoes, roughly chopped
- 2.5 to 3 cups hot pasta water
- Handful of basil leaves
- Salt and pepper to taste
- Additional olive oil (a few tablespoons)
- 400g cooked pasta
Preparation
Heat olive oil in a large pan over medium-high heat.
Once the oil is hot, add minced garlic, sliced chillies, and chopped cherry tomatoes to the pan.
Cook for 1-2 minutes.
Add 2.5 to 3 cups of hot pasta water.
After another 2 minutes, add basil leaves, salt, pepper, and a few more tablespoons of olive oil to the sauce.
Cook for another minute.
Add the cooked pasta and mix everything together.
Serve and enjoy.
