Homemade Simple Tomato Pasta with Fresh Herbs

Ingredients

  • Olive oil (enough to cover the bottom of the pan)
  • 3 big cloves of garlic, minced
  • 2 small chillies, sliced
  • 350g cherry tomatoes, roughly chopped
  • 2.5 to 3 cups hot pasta water
  • Handful of basil leaves
  • Salt and pepper to taste
  • Additional olive oil (a few tablespoons)
  • 400g cooked pasta

Preparation

  1. Heat olive oil in a large pan over medium-high heat.

  2. Once the oil is hot, add minced garlic, sliced chillies, and chopped cherry tomatoes to the pan.

  3. Cook for 1-2 minutes.

  4. Add 2.5 to 3 cups of hot pasta water.

  5. After another 2 minutes, add basil leaves, salt, pepper, and a few more tablespoons of olive oil to the sauce.

  6. Cook for another minute.

  7. Add the cooked pasta and mix everything together.

  8. Serve and enjoy.
