Simple Tomato and Garlic Pasta

Ingredients

  • Olive oil, enough to cover the bottom of the pan
  • 3 large garlic cloves, minced
  • 2 small chilies, sliced
  • 350 grams cherry tomatoes, roughly chopped
  • 2.5 to 3 cups hot pasta water
  • A large handful of basil leaves
  • Salt and pepper, to taste
  • Additional olive oil, a few tablespoons
  • 400 grams cooked pasta

Preparation

  1. Cook 400g of pasta according to package instructions and reserve 2.5 to 3 cups of pasta water

  2. Heat olive oil in a large pan over medium-high heat.

  3. Once the oil is hot, add minced garlic, sliced chilies, and chopped cherry tomatoes.

  4. Cook for 1-2 minutes.

  5. Add the reserved hot pasta water.

  6. After another 2 minutes, add basil leaves, salt, pepper, and a few more tablespoons of olive oil.

  7. Cook for another minute.

  8. Add the cooked pasta and mix everything together.

  9. Enjoy!
