Simple Tomato and Garlic Pasta
Ingredients
- Olive oil, enough to cover the bottom of the pan
- 3 large garlic cloves, minced
- 2 small chilies, sliced
- 350 grams cherry tomatoes, roughly chopped
- 2.5 to 3 cups hot pasta water
- A large handful of basil leaves
- Salt and pepper, to taste
- Additional olive oil, a few tablespoons
- 400 grams cooked pasta
Preparation
Cook 400g of pasta according to package instructions and reserve 2.5 to 3 cups of pasta water
Heat olive oil in a large pan over medium-high heat.
Once the oil is hot, add minced garlic, sliced chilies, and chopped cherry tomatoes.
Cook for 1-2 minutes.
Add the reserved hot pasta water.
After another 2 minutes, add basil leaves, salt, pepper, and a few more tablespoons of olive oil.
Cook for another minute.
Add the cooked pasta and mix everything together.
