Quick and Easy Veggie Coconut Curry

Ingredients

  • tips from 2 spring onions
  • 2 cups chopped broccoli
  • 1 cup chopped bell peppers
  • 1 cup chopped carrots
  • 1 cup green beans
  • 1/2 cup coconut cream
  • 1/2 cup vegetable stock
  • 1 tablespoon mild curry powder
  • 2 teaspoons turmeric
  • 1 teaspoon nutmeg
  • salt and pepper to taste
  • 2 cups cooked quinoa

Preparation

  1. In a large pot, heat the vegetable stock over medium heat.

  2. Add the spring onion tips, broccoli, bell peppers, carrots, and green beans. Sauté for 5 minutes.

  3. Stir in the curry powder, turmeric, nutmeg, salt, and pepper.

  4. Pour in the coconut cream and bring to a simmer.

  5. Cook for 15-20 minutes until vegetables are tender.

  6. Serve over the cooked quinoa.
