Quick and Easy Veggie Coconut Curry
Ingredients
- tips from 2 spring onions
- 2 cups chopped broccoli
- 1 cup chopped bell peppers
- 1 cup chopped carrots
- 1 cup green beans
- 1/2 cup coconut cream
- 1/2 cup vegetable stock
- 1 tablespoon mild curry powder
- 2 teaspoons turmeric
- 1 teaspoon nutmeg
- salt and pepper to taste
- 2 cups cooked quinoa
Preparation
In a large pot, heat the vegetable stock over medium heat.
Add the spring onion tips, broccoli, bell peppers, carrots, and green beans. Sauté for 5 minutes.
Stir in the curry powder, turmeric, nutmeg, salt, and pepper.
Pour in the coconut cream and bring to a simmer.
Cook for 15-20 minutes until vegetables are tender.
Serve over the cooked quinoa.
