Easy Vegetarian Teriyaki Stir Fry
Ingredients
- 1 cup rice
- 1.5 cups vegetable broth or water
- 1/2 teaspoon salt
- olive oil for cooking
- 3 eggs
- 1/4 cup chopped onion
- chopped carrots
- chopped red bell pepper
- chopped yellow bell pepper
- chopped zucchini
- chopped broccoli
- optional chopped jalapeño
- 1/2 cup coconut aminos or soy sauce
- 3 tablespoons rice vinegar
- 1/2 cup applesauce
- 2 minced garlic cloves
- 1-inch piece minced ginger
- chili flakes to taste
Preparation
Heat olive oil in a medium saucepan.
Add 1 cup rice and stir for 1-2 minutes.
Add 1.5 cups of broth or water and 1/2 teaspoon salt, then bring to a boil.
Reduce heat to low, cover, and cook for 15 minutes undisturbed.
Remove from heat and let sit covered for another 10 minutes.
Beat 3 eggs and scramble in a lightly greased frying pan, then set aside.
Add more oil to the pan and cook 1/4 cup chopped onion for 4 minutes.
Add chopped carrots, red and yellow bell pepper, zucchini, broccoli, and optional jalapeño, then cook stirring until vegetables are soft, about 5 minutes.
Combine 1/2 cup coconut aminos or soy sauce, 3 tablespoons rice vinegar, 1/2 cup applesauce, 2 minced garlic cloves, minced ginger from a 1-inch piece, and chili flakes in a small saucepan.
Bring the sauce to a low boil and cook for 5 minutes.
Taste the sauce and season as needed.
Combine the cooked rice, vegetables, eggs, and sauce, and toss together.
Serve immediately, optionally over cauliflower rice.
