Easy Egg Fried Rice with Vegetables

Ingredients

  • 200g rice
  • 1 onion
  • 2 cloves garlic
  • 2 carrots
  • 1 medium head broccoli
  • 1 can drained butter beans
  • 200g edamame beans
  • 2 tbsp soy sauce
  • 2 tsp Chinese 5 spice
  • lemon juice
  • olive oil
  • eggs

Preparation

  1. Precook the rice and cool it as it works better with cooked rice.

  2. You can use any chopped up veggies, fresh or frozen.

  3. Heat olive oil in a wok and cook the onion and garlic.

  4. Add all the veggies and cook; if using frozen, allow them to defrost in the wok.

  5. Add the beans and the rice, and cook for 3 minutes.

  6. Break the eggs into the rice, turn down the heat, beat the eggs into the rice, and keep stirring everything together.

  7. Add the soy sauce, Chinese 5 spice, and lemon juice.

  8. Serve with fresh coriander if available. This is a quick and easy midweek meal.
