Easy Egg Fried Rice with Vegetables
Ingredients
- 200g rice
- 1 onion
- 2 cloves garlic
- 2 carrots
- 1 medium head broccoli
- 1 can drained butter beans
- 200g edamame beans
- 2 tbsp soy sauce
- 2 tsp Chinese 5 spice
- lemon juice
- olive oil
- eggs
Preparation
Precook the rice and cool it as it works better with cooked rice.
You can use any chopped up veggies, fresh or frozen.
Heat olive oil in a wok and cook the onion and garlic.
Add all the veggies and cook; if using frozen, allow them to defrost in the wok.
Add the beans and the rice, and cook for 3 minutes.
Break the eggs into the rice, turn down the heat, beat the eggs into the rice, and keep stirring everything together.
Add the soy sauce, Chinese 5 spice, and lemon juice.
Serve with fresh coriander if available. This is a quick and easy midweek meal.
