Super Simple Egg Fried Rice
Ingredients
- 1 onion diced
- 2 cloves of garlic, crushed
- 1 tsp ginger (fresh if you have it, grated or dried)
- 2 peppers in strips
- 2 medium carrots in thin strips
- Broccoli in small florets
- Sweetcorn
- 200g precooked chicken/tofu/beans or nuts
- 200g rice
- 4 eggs
- 1 tbsp soy sauce
Optional

Preparation
Pre cook the rice and leave it to cool.
Heat the oil in a wok, stir fry the onion, garlic and ginger for a few minutes.
Add all the veg, on a medium-high heat and keep it moving for 3-5 minutes.
Add your choice of protein.
Add the cooked rice in on one side of the pan. Make a well in it.
Crack in the eggs and beat them. Now quickly stir it all together and reduce the heat.
Add soy sauce and serve topped with chilli if wanted.
Notes
This dish is cheap, nutritious, and makes great lunchtime leftovers. Stick it on your meal plan!
