Simple Healthy Veggie Fried Rice Dinner
Ingredients
- 1 cup rice
- 1.5 cups vegetable broth
- 3 eggs
- 1/3 cup diced red onion
- 2 carrots, diced
- garlic
- ginger
- broccoli
- olive oil
- sesame oil
- 2-3 tablespoons tamari or soy sauce
- sriracha (optional)
- jalapeños (optional)
Preparation
Fry garlic and ginger in a pan as part of cooking rice method.
Add 1 cup rice and cook for a few minutes.
Add 1.5 cups vegetable broth, bring to boil, then simmer covered for 15 minutes.
Beat 3 eggs and scramble in oil, then remove from pan.
Add 1/3 cup diced red onion and 2 diced carrots, cook in olive oil and sesame oil for 6 minutes.
Add garlic and broccoli, and stir.
Add the cooked rice, scrambled eggs, and 2-3 tablespoons tamari or soy sauce, stir and cook for a few minutes.
Optionally, stir in sriracha and jalapeños for a little heat.
