Simple Healthy Veggie Fried Rice Dinner

Ingredients

  • 1 cup rice
  • 1.5 cups vegetable broth
  • 3 eggs
  • 1/3 cup diced red onion
  • 2 carrots, diced
  • garlic
  • ginger
  • broccoli
  • olive oil
  • sesame oil
  • 2-3 tablespoons tamari or soy sauce
  • sriracha (optional)
  • jalapeños (optional)

Preparation

  1. Fry garlic and ginger in a pan as part of cooking rice method.

  2. Add 1 cup rice and cook for a few minutes.

  3. Add 1.5 cups vegetable broth, bring to boil, then simmer covered for 15 minutes.

  4. Beat 3 eggs and scramble in oil, then remove from pan.

  5. Add 1/3 cup diced red onion and 2 diced carrots, cook in olive oil and sesame oil for 6 minutes.

  6. Add garlic and broccoli, and stir.

  7. Add the cooked rice, scrambled eggs, and 2-3 tablespoons tamari or soy sauce, stir and cook for a few minutes.

  8. Optionally, stir in sriracha and jalapeños for a little heat.
