Carrot Noodles with Tofu
Ingredients
- 4-5 carrots
- 300g medium hard tofu
- 1/3 cup flour
- 2 tsp garlic powder
- 1 tsp salt
- 2 tbsp olive oil
- 2 cloves of garlic
- 1 tsp salt
- 1 tsp grated ginger
- 5 tbsp soy sauce
- 1 tsp ginger
- 3 tbsp mirin or 1 tbsp sugar
- 2 tbsp sesame oil
- 1 tbsp sesame seeds
Preparation
Spiralize or julienne the carrots to create noodles.
Cut the tofu into cubes.
In a bowl, mix flour, garlic powder, and 1 tsp salt, then coat the tofu cubes with the mixture.
Heat 2 tbsp olive oil in a skillet over medium heat and fry the coated tofu until golden brown, about 5-7 minutes. Remove and set aside.
In the same skillet, sauté minced garlic and grated ginger for 1 minute until fragrant.
Add soy sauce, the remaining 1 tsp ginger, 1 tsp salt (if needed), and 3 tbsp mirin or 1 tbsp sugar. Simmer for 2-3 minutes to make a sauce.
Add the carrot noodles to the skillet and cook for 3-5 minutes until tender.
Return the tofu to the skillet, drizzle with sesame oil, sprinkle with sesame seeds, and toss to combine before serving.
