Sesame Bok Choy and Carrots Stir-Fry
Ingredients
- 1 bunch baby bok choy
- 2 large carrots
- 4oz shiitake mushrooms
- 1 tbsp sesame oil
- 1/4 tsp garlic powder
- 1/4 tsp white pepper
- 1/4 tsp salt
- 1/8 tsp onion powder
- Sesame seeds
Preparation
Clean and cut bok choy leaves in half long-way. Use a mandolin to thinly slice carrots. Clean and thinly slice mushrooms
Heat sesame oil a skillet over medium-high heat. Add carrots and bok choy, then sprinkle with garlic powder, onion powder, white pepper, and salt. Toss to coat in oil/seasoning
Cover pan and cook, stirring occasionally, until bok choy leaves just begin to wilt. Add the mushrooms and continue to cook until bok choy is tender (easily pierced with a fork)
Remove from heat, sprinkle with sesame seeds, and serve!
