Peanut Butter Chicken Dinner

Ingredients

  • 4 tbsp peanut butter
  • 2 tbsp honey
  • 4 tbsp tamari or soy sauce
  • 3 cloves garlic, grated
  • 1 tbsp grated ginger
  • 2 tbsp sesame oil
  • 1 tbsp sriracha (optional)
  • 6-8 skinless chicken thighs

For serving

  • Noodles and vegetables
  • Spring onion, chopped coriander and sesame seeds to garnish

Preparation

  1. Put the peanut butter, honey, tamari, garlic, ginger and sesame oil in a large bowl and mix well to make your marinade.

  2. Add the chicken thighs, coat well with the marinade and leave in the fridge for at least an hour.

  3. Preheat oven to 180C.

  4. Put the chicken in an oven proof dish, cover tightly and cook for 20 minutes.

  5. Remove the cover, give it a little mix and cook for a further 10-15 minutes till the chicken is cooked through and the sauce is golden brown and sticky.

  6. Serve with noodles and veg and don’t forget the delicious sauce from the bottom of the dish.
