Moroccan Style Rice with Vegetables and Spices

Ingredients

  • 2 cups rice
  • frozen peas
  • sweet corn
  • 4 carrots
  • 2 peppers
  • 1 broccoli
  • bunch of asparagus
  • 1 red or white onion
  • 2 apples
  • 2 teaspoons turmeric
  • curry powder
  • cumin
  • 3 tablespoons teriyaki or soy sauce
  • 3 tablespoons soy sauce
  • sultanas

Preparation

  1. Boil 2 cups of rice with some frozen peas and sweet corn.

  2. Pan fry four carrots, two peppers, one whole broccoli chopped, a bunch of asparagus, one red or white onion diced, and two apples.

  3. Flavor the vegetables with 2 teaspoons of turmeric, curry powder, and cumin. Mix in 3 tablespoons of teriyaki or soy sauce.

  4. Mix the vegetables with the rice in a wok and add 3 tablespoons more of soy sauce.

  5. Add some sultanas for a sweet bite.
