Moroccan Style Rice with Vegetables and Spices
Ingredients
- 2 cups rice
- frozen peas
- sweet corn
- 4 carrots
- 2 peppers
- 1 broccoli
- bunch of asparagus
- 1 red or white onion
- 2 apples
- 2 teaspoons turmeric
- curry powder
- cumin
- 3 tablespoons teriyaki or soy sauce
- 3 tablespoons soy sauce
- sultanas
Preparation
Boil 2 cups of rice with some frozen peas and sweet corn.
Pan fry four carrots, two peppers, one whole broccoli chopped, a bunch of asparagus, one red or white onion diced, and two apples.
Flavor the vegetables with 2 teaspoons of turmeric, curry powder, and cumin. Mix in 3 tablespoons of teriyaki or soy sauce.
Mix the vegetables with the rice in a wok and add 3 tablespoons more of soy sauce.
Add some sultanas for a sweet bite.
