Sweet Potato Curry Soup
Ingredients
- 2 onions
- 4 cloves of garlic
- 1 & 1/2 tsp of madras curry paste
- 3 tomatoes
- 3 carrots
- a chunk of celeriac, a chunk of parsley root
- 1/2 leek
- 2 cups of green beans
- 1 cup of garbanzo beans
- 2-3 Japanese sweet potatoes
- 1 apple
- rice flour to thicken the soup
- 2 tbsp of Lemon juice
- vegetable broth
- salt to taste
Preparation
Cut all the vegetables and the apple into small chunks, the potatoes in big chunks, and cook everything until tender
Add the curry paste before cooking the vegetables, the paste I use sometimes doesn't dissolve very well, but cooking it for a longer time helps ??
After the vegetables are soft, thicken the soup with some rice flour dissolved in cold water
Add lemon juice, some vegetable broth powder and salt to taste
