french soup au pistou
Ingredients
- for the soup:
- 1 red onion
- 2 carrots
- 1 spring onion
- 1 can green beans
- 3 garlic cloves
- 1zuchhini
- 2 tomatoes
- salt,pepper
- 2tb vegetable broth
- 1 can white beans
- 100g soup pasta ( i love to use malloreddus sardi)
- 1750ml water
- for the pistou:
- 60ml olive oil
- handful basil
- 3tb nutritional yeast
Preparation
Chop the onion and garlic
Fry in oil
Add the vegetable broth
Add the water
Chop up the carrots, tomatoes and zucchini
Add to the pot
Let it simmer for 15 minutes
Add the pasta
Cook another 15 minutes (depending on pasta time)
For the pesto, fry the garlic then puree all ingredients together
Chop up the spring onion
Add to the pot
Pour the water from the white and green beans away
Add to the pot
Add more water if needed
Simmer about 3 more minutes
Spice with salt and pepper
Serve the soup with the pesto to the side
