Spicy Chicken and Bean Tacos
Ingredients
- 1kg chicken mince
- 2 tbsp oil
- 1 large onion diced
- 7 cloves of garlic grated
- 1.5 tsp salt (adjust to taste)
- 0.5 tsp black pepper
- 1.5 tsp chilli powder
- 1.5 tsp cumin powder
- 1.5 tsp coriander powder
- 1.5 tsp oregano
- 1 can chopped tomatoes
- 1 can black beans (kidney beans or mixed beans also work)
- 2 Maggi stock cubes (these are small in size or use 1 larger stock cube of your choice)
- 4 tbsp jalapenos finely chopped
- coriander to garnish
Preparation
Fry the onions and garlic in oil till lightly brown. Add salt and spices and saute for a few minutes.
Add the chicken mince and keep stirring as it cooks to prevent clumping. Once cooked, add chopped tomatoes and beans and crumble in stock cube(s). Cook uncovered till all the moisture has evaporated.
Lastly add chopped jalapenos and promptly remove from heat. Garnish with coriander and serve in taco shells with lettuce, salsa and guacamole.
Tips
The filling can be served in wraps or tacos.
For a healthier version, bake the wraps in the oven upside down on the racks.
Serve with plenty of salad and a squeeze of lime juice over the top.
