Easy Lamb Chilli Con Carne
Ingredients
- 3-4 tbsp oil
- 1kg lamb mince
- 1 large diced onion
- 6 cloves of garlic, finely chopped
- 1/2 tsp salt
- 1 tsp chicken seasoning
- 1 tsp paprika
- 1 tsp chilli powder
- 2 tsp cumin powder
- 1 tbsp mixed herbs
- 1 tsp dried mint
- 1 tbsp Worcestershire sauce
- 1 tbsp dark soy sauce
- 2 tbsp tomato puree
- 1 can chopped tomatoes
- 1 can kidney beans in chilli sauce
For serving
- rice
- coriander to garnish
- sour cream
- sliced lettuce
- cheese
Preparation
In a pan, heat the oil then add the mince and brown it until it is no longer pink.
Add the onion, garlic, salt, chicken seasoning, spices, dried herbs, Worcestershire sauce, soy sauce, tomato puree, and canned tomatoes, then mix well and cook over medium heat for 20-25 minutes until the sauce thickens and turns a deep red color, stirring occasionally.
Add the kidney beans in chilli sauce and cook for an additional 5 minutes; adjust salt if needed.
Serve the Chilli Con Carne over rice with fresh coriander, sour cream, sliced lettuce, and grated cheese.
