Tofu Spinach Pie

Ingredients

  • ☀️1 block of firm tofu
  • ☀️2 thingos of frozen spinach (make sure all water is drained out)
  • ☀️a dash of apple cider vinegar
  • fresh lemon juice

Preparation

  1. Fry leek, spring onion and brown onion together until nice and soft. Cook for around 15 minutes

  2. Add pine nuts and cook for another 5 minutes (careful not to burn them)

  3. Meanwhile crumble up tofu and add thawed spinach to a food processor

  4. Add pan fried onion mixture to tofu/ spinach

  5. Process well with apple cider vinegar, nooch, lemon juice, dill salt and pepper

  6. Taste mixture to make sure it’s at your liking

  7. Layer thawed filo pastry into the bottom of a baking dish

  8. Brush oil onto each layer

  9. Once layers are nice and built up (I added around 7 layers) pack in your tofu mixture

  10. Layer a couple of filo layers on top, oiling inbetween

  11. On the top layer, tear off little filo strips and scrunch them up into little flowers

  12. Add them on top of the pie

  13. This makes it super crispy and lovely on top

  14. Drizzle with a touch more olive oil

  15. Bake at 200 degrees for around 20 minutes

  16. Watch the pastry as it can catch and burn easily
