Spicy Roasted Tofu with Vegetables
Ingredients
- 14 oz firm tofu
- 8 oz cremini mushrooms
- 2 cups broccoli florets
- 1 cup rice
Tofu marinade
- 2 tbsp tamari
- 1 tbsp sriracha
- 1 tbsp roasted sesame oil
- 1 tsp rice wine vinegar
- Black pepper to taste
Miso sauce
- 2 tbsp tamari
- 1 tbsp sriracha
- 1/4 tsp white miso
- 2 tsp minced ginger
- 1/2 tsp garlic powder
- Splash of rice wine vinegar
Preparation
Pour the marinade over the tofu and marinate for 30-45 minutes
Preheat oven to 400°F and roast the tofu for 25 minutes
Whisk together all the miso sauce ingredients
Sauté the mushrooms, add 2 tablespoons of miso sauce to coat, and set aside
Toss the baked tofu in a pan, add the remainder of the sauce, and toss to coat
Serve with rice
Steam the broccoli until tender
