Spicy Roasted Tofu with Vegetables

Ingredients

  • 14 oz firm tofu
  • 8 oz cremini mushrooms
  • 2 cups broccoli florets
  • 1 cup rice

Tofu marinade

  • 2 tbsp tamari
  • 1 tbsp sriracha
  • 1 tbsp roasted sesame oil
  • 1 tsp rice wine vinegar
  • Black pepper to taste

Miso sauce

  • 2 tbsp tamari
  • 1 tbsp sriracha
  • 1/4 tsp white miso
  • 2 tsp minced ginger
  • 1/2 tsp garlic powder
  • Splash of rice wine vinegar

Preparation

  1. Pour the marinade over the tofu and marinate for 30-45 minutes

  2. Preheat oven to 400°F and roast the tofu for 25 minutes

  3. Whisk together all the miso sauce ingredients

  4. Sauté the mushrooms, add 2 tablespoons of miso sauce to coat, and set aside

  5. Toss the baked tofu in a pan, add the remainder of the sauce, and toss to coat

  6. Serve with rice

  7. Steam the broccoli until tender
