Peanut Butter Marinated Tofu Nourish Bowl

Ingredients

  • firm tofu
  • 200ml peanut butter
  • 2tbsp lime juice
  • 2 tbsp sesame seed oil
  • 2-3 tbsp syrup
  • 1 tbsp syrup
  • a pinch of garlic powder
  • a pinch of chilli powder
  • rice noodles
  • salad
  • avocado
  • veggies and extra sauce or peanuts

Preparation

  1. Choose a firm tofu, then place on a plate and put something heavy on top (example books/pot with water!) Don't forget paper in-between the tofu and heavy item. Let sit for 30 minutes to press of water

  2. In the mean time, mix together 200ml peanut butter (i choose crunchy!), 2tbsp lime juice, 2 tbsp sesame seed oil, 2-3 tbsp syrup, 1 tbsp syrup, a pinch of garlic powder, a pinch of chilli powder (or sambal oelek). Mix together. Add 1-2tbsp water to thin it out if necessary. If necessary, add salt (if you have unsalted peanut butter

  3. Once the tofu has been pressed of water, cut into desired shape

  4. Then - either place the tofu in the sauce and marinade for 30-60 minutes before baking. Or just cover in the sauce and bake in the oven at 200C for 25-30 minutes. Turning the pieces over after half the time

  5. Eat the tofu with some rice noodles, salad, avocado, veggies and extra sauce or peanuts for crunch
