Quick and Easy Peanut Butter Noodles
Ingredients
- 250g rice noodles
- 2 garlic cloves
- 1 small onion
- 200g firm tofu
- 2 tbsp oil
- 3 HEAPED tbsp peanut butter
- 2 tbsp Japanese soy sauce
- 1 tbsp lime juice
- Chilli flakes
- 1 tbsp syrup
- Grated ginger (optional)
- 3 tbsp oat cream
- Water (to thin the sauce, add 1 tbsp at a time until desired consistency)
- Spring onion
- Bell pepper
- Crushed peanuts
- Sesame seeds
Preparation
Dice the onion and mince the garlic. Add them to a hot frying pan with oil. Add cubed tofu and fry until golden brown.
In the meantime, boil water and add the rice noodles. Boil for 2-3 minutes until soft. Then drain the water.
Make the sauce by mixing together peanut butter, soy sauce, lime juice, syrup, chilli flakes, oat cream, and water.
Add the sauce to the frying pan along with the noodles. Mix well.
Dice the bell pepper and spring onion. Add them to the frying pan. Mix until well combined.
Season with extra salt if necessary. Garnish with crushed peanuts, chilli flakes, sesame seeds, and coriander.
