3-Ingredient Vanilla Date Caramel
Ingredients
- 10 large dates, pits removed
- 1 teaspoon pure vanilla extract
- 1/4 cup coconut cream (solid part only)
Preparation
Pit the dates and add them to a microwave-safe bowl or measuring cup. Cover with water and microwave for 2 minutes.
Drain the dates and add them to a food processor or high-speed blender. Add the vanilla and coconut cream and blend until smooth, scraping down the sides as needed, until creamy.
Storage tips
Store in an airtight container for up to a week. For longer storage, refrigerate, but the coconut cream may harden the caramel, so soften before use.
