3-Ingredient Vanilla Date Caramel

Ingredients

  • 10 large dates, pits removed
  • 1 teaspoon pure vanilla extract
  • 1/4 cup coconut cream (solid part only)

Preparation

  1. Pit the dates and add them to a microwave-safe bowl or measuring cup. Cover with water and microwave for 2 minutes.

  2. Drain the dates and add them to a food processor or high-speed blender. Add the vanilla and coconut cream and blend until smooth, scraping down the sides as needed, until creamy.

Storage tips

  1. Store in an airtight container for up to a week. For longer storage, refrigerate, but the coconut cream may harden the caramel, so soften before use.
