Go-To Pantry Tomato Soup

Ingredients

  • 28 oz can diced or whole tomatoes
  • 1 small onion diced
  • 2 garlic cloves minced
  • 2.5 cups broth or water
  • Salt, pepper, chili flakes

Preparation

  1. Sauté onion in olive oil, optionally add a teaspoon of vegan butter, for 5 minutes

  2. Add garlic and spices, cook for another minute

  3. Add the can of tomatoes with juices; if using whole tomatoes, crush them by hand while adding to the pot

  4. Bring to a boil and simmer for 15 minutes

  5. Blend and enjoy

Tips

  1. Best served with garlic bread or grilled cheese

  2. You can add additional spices like basil or oregano, more veggies such as carrots or spinach, or coconut milk for creaminess
