Vegan Panang Curry Soup
Ingredients
- 2 potatoes
- 2 carrots
- 1 red pepper
- 1 broccoli
- 1 can of coconut milk
- 1 can of paeng curry
- 2 tbsp curry
- 1 tbsp chili powder
- Salt & pepper
Preparation
Chop the potatoes, carrots, red pepper, and broccoli into bite-sized pieces.
In a large pot, heat the paeng curry and curry powder over medium heat for 1-2 minutes to release flavors.
Add the chopped vegetables, coconut milk, chili powder, salt, and pepper. Stir to combine.
Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes or until vegetables are tender.
Serve hot.
