Vegan Panang Curry Soup

Ingredients

  • 2 potatoes
  • 2 carrots
  • 1 red pepper
  • 1 broccoli
  • 1 can of coconut milk
  • 1 can of paeng curry
  • 2 tbsp curry
  • 1 tbsp chili powder
  • Salt & pepper

Preparation

  1. Chop the potatoes, carrots, red pepper, and broccoli into bite-sized pieces.

  2. In a large pot, heat the paeng curry and curry powder over medium heat for 1-2 minutes to release flavors.

  3. Add the chopped vegetables, coconut milk, chili powder, salt, and pepper. Stir to combine.

  4. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes or until vegetables are tender.

  5. Serve hot.
