A Fan of Broccoli and Potatoes

Ingredients

  • 1 onion
  • 3 garlic
  • 1 broccoli, finely chopped
  • 3 potatoes, chopped
  • 5-6 cups stock

Preparation

  1. Add to a pot, the stem of a broccoli (save the florets for later) and all the other ingredients

  2. Bring it to a boil for 10-15 minutes, or until potatoes are cooked

  3. Purée the soup in a blender, or use a handheld one

  4. Transfer back to the pot, and add the broccoli florets

  5. Cook until green and tender

  6. Serve with wholemeal bread and you have yourself a quick, healthy, and tasty lunch ?
