Alfredo Baked Sweet Potatoes


  • 2 sweet potatoes
  • 1 cup vegan alfredo sauce (check previous posts for our recipe)
  • 1 cup sliced baby spinach
  • 1/2 cup sliced shiitake mushrooms
  • 1/2 cup fresh peas
  • 1/3 cup sliced kalamata olives
  • 1/3 cup sliced fresh tomatoes
  • a few large basil leaves thinly sliced


  1. Heat oven to 350°, slice potatoes surface length and width wise, bake for one hour

  2. Heat alfredo sauce in a small pot on medium heat, add spinach and mushrooms cook for about 10 minutes then add peas, cook for another 5 minutes and set aside

  3. Remove potatoes from oven, allow to cool for 10 minutes, press sides towards one another to open up potatoes

  4. Pour alfredo sauce in bottom of sweet potatoes and top with olives and tomatoes

  5. Finish with sliced basil garnish with fresh cracked black pepper and enjoy
