Banana Bread

Ingredients

  • 1 3/4 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup grape seed oil
  • 1 teaspoon vanilla extract
  • 1/3 cup organic sugar
  • 4 bananas, mashed
  • 1/3 cup dairy-free chocolate chips

Preparation

  1. Preheat oven to 350 degrees

  2. Combine flour, baking powder, baking soda and salt in a medium/large size bowl and set aside

  3. In a small bowl, mix oil, sugar and vanilla

  4. Add the wet ingredients and mashed bananas to batter and mix until just combined

  5. Add in chocolate chips and mix briefly

  6. Spoon into a well-greased or paper lined muffin tin

  7. Place in the oven, on the center rack, and bake for about 20 – 25 minutes
