Blackberry and Apple Cookies
Ingredients
- 1 ripe banana
- 1 tablespoon maple syrup
- drizzle of date syrup
- pinch of cinnamon
- 1/2 teaspoon baking powder
- dried apple flakes
- oats
- dried seed mix
Blackberry compote
- fresh blackberries
- light brown sugar
Preparation
Preheat the oven to 130°C
Mash a ripe banana with a tablespoon of maple syrup, a drizzle of date syrup, and a pinch of cinnamon.
Stir in 1/2 teaspoon of baking powder.
Add blackberry compote, dried apple flakes, oats, and dried seed mix until the consistency is like cookies and holds together.
Form the mixture into cookie shapes on a baking tray
Place a bit of blackberry compote on top and some apple flakes.
Bake at 130 degrees Celsius for 35 minutes, turning down to 100 degrees if browning, to bake and dry without burning. Adjust temperatures based on your oven
Blackberry compote
Wash the fresh blackberries thoroughly, optionally soaking overnight in salt water to remove bugs.
Combine with light brown sugar and simmer for ten minutes until done, but not to the point of becoming jam.
