Blackberry & Apple Cookies
Ingredients
- a tablespoon of maple syrup
- a drizzle of date syrup
- pinch of cinnamon. 1/2 teaspoon of baking powder
- blackberry compote
- dried apple (from @grapetreefoods) flakes
- oats & dried seed
- banana
Preparation
I mashed a ripe banana with a tablespoon of maple syrup, a drizzle of date syrup, pinch of cinnamon
Teaspoon of baking powder
I stirred in blackberry compote, dried apple (from @grapetreefoods) flakes, oats & dried seed mix also from @grapetreefoods till the consistency was like cookies and would hold together on the tray
I put a bit of blackberry compote on top and some apple flakes and baked on a low heat for 35 minutes
Degrees turning down to 100 if they are browning, so they continue to bake & dry without burning)
Blackberry compote is fresh blackberries washed (I soak them overnight in salt water to remove any bugs) rinsed thoroughly
With light brown sugar brought to simmer point but not to become jam
Simmer ten mins & done
I don’t measure things because this is a recipe you make depending on the amount of banana you have and ensuring the right consistency is achieved
Not dry & crumbly
But also not sloppy & wet
They are low in sugar, gluten free & fat free and containing fruit, cereals & seeds
They are surprisingly sweet and taste like they should be unhealthy
But they aren’t
Kids would love to make them because they’re so easy, (just add more compote if too dry, more oats if too wet)because of the bright purple pink colour too! I hope you give them a go and let me know how they turned out
Note: my oven isn’t so hot so adjust your temps accordingly)
You are aiming for these to bake lightly and set as opposed to browning
They are like Chewy cereal bars lighter & crumblier
They are great crumbled into dairy free yoghurt
