Broccoli and Potato Soup
Ingredients
- 1 onion
- 3 garlic cloves
- 1 broccoli
- 3 potatoes
- 5-6 cups stock
Preparation
Add the broccoli stem, reserving the florets for later, and all other ingredients to a pot. Bring to a boil and cook for 10-15 minutes until potatoes are cooked.
Purée the soup in a blender or using a handheld blender.
Transfer the soup back to the pot, add the reserved broccoli florets, and cook until they are green and tender. Serve with wholemeal bread for a quick lunch.
