Broccoli and Potato Soup

Ingredients

  • 1 onion
  • 3 garlic cloves
  • 1 broccoli
  • 3 potatoes
  • 5-6 cups stock

Preparation

  1. Add the broccoli stem, reserving the florets for later, and all other ingredients to a pot. Bring to a boil and cook for 10-15 minutes until potatoes are cooked.

  2. Purée the soup in a blender or using a handheld blender.

  3. Transfer the soup back to the pot, add the reserved broccoli florets, and cook until they are green and tender. Serve with wholemeal bread for a quick lunch.
