Broccoli Cheddar Fritters in Air Fryer

Ingredients

  • 1 pound frozen broccoli
  • 1 tablespoon olive oil
  • 2-3 cloves garlic
  • 2 large eggs
  • 1 cup grated sharp cheddar cheese
  • 2 tablespoons minced chives or 0.5 teaspoon dried herbs
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper
  • pinch red pepper flakes
  • 0.25 cup arrowroot or cornstarch
  • 2 tablespoons almond flour

Sauce components

  • 3 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • pinch garlic powder
  • 1 tablespoon lemon juice
  • 1 teaspoon honey

Preparation

  1. Thaw 1 pound frozen broccoli in the microwave, squeeze out excess liquid, and chop into small bits about 1/4 inch.

  2. Heat a saucepan to medium heat and add 1 tablespoon olive oil; when oil moves quickly, add 2-3 cloves garlic.

  3. Stir garlic constantly for about 30 seconds until fragrant, then add chopped broccoli and cook, stirring constantly, for 1-2 minutes.

  4. Set broccoli mixture aside to cool.

  5. In a large mixing bowl, combine 2 large eggs, 1 cup grated sharp cheddar cheese, 2 tablespoons minced chives or 0.5 teaspoon dried herbs, 0.25 teaspoon salt, 0.25 teaspoon pepper, pinch of red pepper flakes, 0.25 cup arrowroot or cornstarch, and 2 tablespoons almond flour; whisk to incorporate.

  6. Add the cooled broccoli mixture to the bowl and combine into a sticky batter; if needed, add more almond flour until you can form balls with dampened fingers.

  7. Line air fryer basket with nonstick parchment paper and scoop 4 balls of about 2 tablespoons each, then flatten with dampened fingers to approximately 3/4 inch high.

  8. Set air fryer to 390 degrees Fahrenheit for 10 minutes, flip fritters after the first 6 minutes, and repeat with remaining batter.

  9. For the sauce, whisk together 3 tablespoons mayonnaise, 1 tablespoon Dijon mustard, pinch of garlic powder, 1 tablespoon lemon juice, and 1 teaspoon honey.

  10. Enjoy the fritters with the sauce.
