Broccoli Cheddar Fritters in Air Fryer
Ingredients
- 1 pound frozen broccoli
- 1 tablespoon olive oil
- 2-3 cloves garlic
- 2 large eggs
- 1 cup grated sharp cheddar cheese
- 2 tablespoons minced chives or 0.5 teaspoon dried herbs
- 0.25 teaspoon salt
- 0.25 teaspoon pepper
- pinch red pepper flakes
- 0.25 cup arrowroot or cornstarch
- 2 tablespoons almond flour
Sauce components
- 3 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- pinch garlic powder
- 1 tablespoon lemon juice
- 1 teaspoon honey
Preparation
Thaw 1 pound frozen broccoli in the microwave, squeeze out excess liquid, and chop into small bits about 1/4 inch.
Heat a saucepan to medium heat and add 1 tablespoon olive oil; when oil moves quickly, add 2-3 cloves garlic.
Stir garlic constantly for about 30 seconds until fragrant, then add chopped broccoli and cook, stirring constantly, for 1-2 minutes.
Set broccoli mixture aside to cool.
In a large mixing bowl, combine 2 large eggs, 1 cup grated sharp cheddar cheese, 2 tablespoons minced chives or 0.5 teaspoon dried herbs, 0.25 teaspoon salt, 0.25 teaspoon pepper, pinch of red pepper flakes, 0.25 cup arrowroot or cornstarch, and 2 tablespoons almond flour; whisk to incorporate.
Add the cooled broccoli mixture to the bowl and combine into a sticky batter; if needed, add more almond flour until you can form balls with dampened fingers.
Line air fryer basket with nonstick parchment paper and scoop 4 balls of about 2 tablespoons each, then flatten with dampened fingers to approximately 3/4 inch high.
Set air fryer to 390 degrees Fahrenheit for 10 minutes, flip fritters after the first 6 minutes, and repeat with remaining batter.
For the sauce, whisk together 3 tablespoons mayonnaise, 1 tablespoon Dijon mustard, pinch of garlic powder, 1 tablespoon lemon juice, and 1 teaspoon honey.
