Creamy Herb Mashed Cauliflower


  • 1 large head cauliflower
  • 2 tablespoons unsalted butter or coconut oil
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon fresh rosemary, or up to 1 teaspoon other fresh herb of your choice
  • sea salt and black pepper to taste


  1. Cut the cauliflower into 2 to 3 inch pieces

  2. Set up a pot with 1 inch of water and a steamer basket.

  3. Bring to a boil, covered, over high heat.

  4. Steam the cauliflower until it is fork-tender, then place it in a food processor along with the butter or coconut oil, olive oil, rosemary or other herb, salt and pepper.

  5. Puree until smooth and creamy.
