Delicious and Healthy Vegan Christmas Cookies

Ingredients

  • 100g vegan butter
  • 70g coconut sugar
  • 1 chia egg
  • Pinch of salt
  • 80g ground almonds
  • 100g spelt flour
  • 60g white flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp mixed seeds (sesame, flax, chia, sunflower, pumpkin)
  • + more mixed seeds for topping

Preparation

  1. Mix all ingredients together.

  2. Form balls and top them with seed mixture.

  3. You can use some more vegan butter and layer it over the balls before you dip them in seed mixture to prevent seeds from falling off.

  4. Bake at 170°C for 20 minutes.
