Easter Extravagance: Spiced Hot Cross Buns
Ingredients

- 500g all-purpose white flour
- 275ml almond milk
- 50g unsalted butter (cold, diced)
- 1 egg beaten
- 75g cane sugar
- 7g instant yeast
- 11/2 tsp salt

- 2 tsp mixed spice
- 75g raisins
- 100g plain white flour
Preparation
Boil the milk and then add butter into it
Set aside to cool until it reaches hand temperature
Beat eggs in a small bowl
Mix the dry ingredients in a big bowl
Pour the milk and beaten eggs into the mixture
Stir with a wooden spoon
Dust your countertop with flour to knead the dough

Grease the mixing bowl with oil before putting the dough back
Cover bowl with a tea towel and set aside to rise

Slice the dough into 6 pieces and roll them into balls
Assemble the balls– a few inches apart– on a baking tray lined with parchment paper
Cover the tray and leave to prove until they’re doubled in size
