Vegan Gluten-Free No Mess Chocolate Muffins

Ingredients

  • 1 cup GF oat flour
  • 1/2 cup cacao powder
  • 1/2 cup coconut sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 medium-size ripe bananas
  • 1/2 cup almond milk
  • 1/4 cup almond butter
  • 2 tsp vanilla extract

Preparation

  1. Preheat oven to 350 ºF and line your muffin pan.

  2. Blend the dry ingredients in a high-speed blender. Then add the wet ingredients.

  3. Blend the mixture until you get a silky smooth batter. (30 sec).

  4. Once done, fill 3/4 of the muffin cups with batter.

  5. Bake for 25-30 min (or until the toothpick comes out clean).

  6. Let the muffins cool for 10 min before transferring them to a wire rack.

  7. Note: Bananas are added to make the muffins more wholesome.
