Oatmeal Bake

Ingredients

  • 2 very ripe bananas
  • 1 c almond milk
  • 1/4 c maple syrup
  • 1 egg
  • 2 cups rolled oats
  • 1 tsp cinnamon
  • 1/3 c chocolate chips
  • 1/4 c runny peanut butter

Preparation

  1. Preheat the oven to 350 degrees and prep an 8x8 baking dish with not stick spray

  2. In a large bowl, mash the 2 bananas and then add in the egg, almond milk, maple syrup, and vanilla extract

  3. Whisk until well mixed

  4. Then add in the oats and cinnamon and stir together until well combined

  5. Next, stir in the chocolate chips and then pour the mixture into the prepped dish

  6. Bake for 35-45 min or until the edges begin to brown and the center feels set

  7. Let sit and cool for 10 minutes, then drizzle peanut butter on top, serve and enjoy! Or store it in the fridge to eat on the go later
