Pumpkin Oat Bars
Ingredients
- 1 cup rolled oats
- 1 cup oat flour
- 1/3 cup pumpkin puree (made mine of bottleneck pumpkin)
- 2 chia flax eggs
- 1 mashed ripe banana
- 1 tsp speculoos (spice)
- 1 tsp cinnamon
- 1/2 tsp cardamom
- 2 tsp baking powder
- a handful walnuts
- enough (oat)milk to combine
Preparation
Bake for 35-40 minutes on 190C
Top with this incredibly SIMPLE lemon frosting: 8 tbsp greek yog, 1 tbsp honey or maple syrup, 1 tbsp lemon zest + 1 tbsp lemon juice
