Pumpkin Oat Bars

Ingredients

  • 1 cup rolled oats
  • 1 cup oat flour
  • 1/3 cup pumpkin puree (made mine of bottleneck pumpkin)
  • 2 chia flax eggs
  • 1 mashed ripe banana
  • 1 tsp speculoos (spice)
  • 1 tsp cinnamon
  • 1/2 tsp cardamom
  • 2 tsp baking powder
  • a handful walnuts
  • enough (oat)milk to combine

Preparation

  1. Bake for 35-40 minutes on 190C

  2. Top with this incredibly SIMPLE lemon frosting: 8 tbsp greek yog, 1 tbsp honey or maple syrup, 1 tbsp lemon zest + 1 tbsp lemon juice
