Pumpkin White Bean Quinoa Burger on a Bed of Arugula, Cucumber & Avocado

Ingredients

  • 1/3 cup rolled oats
  • 1/2 cup cooked quinoa
  • 1/2 cup pumpkin purée
  • 1/2 cup cannellini beans
  • 1 flax egg
  • tsp of coconut oil
  • 2 cloves of garlic
  • 3 sage leaves
  • Fresh thyme
  • Salt & pepper

Preparation

  1. Pulse oats to break up and put aside

  2. Lightly process the pumpkin, beans, and spices

  3. When it come together mix in oats and pulse again add quinoa and flax egg and combine

  4. Form 4 patties and bake at 400 for about 20 minutes and then flip for another 8-10
