Pumpkin White Bean Quinoa Burger
Ingredients
- 1/3 cup rolled oats
- 1/2 cup cooked quinoa
- 1/2 cup pumpkin purée
- 1/2 cup cannellini beans
- 1 flax egg
- 1 tsp coconut oil
- 2 cloves garlic
- 3 sage leaves
- Fresh thyme
- Salt and pepper
Preparation
Pulse the oats to break them up and set aside.
Lightly process the pumpkin, beans, and spices.
When the mixture comes together, mix in the oats and pulse again, then add the quinoa and flax egg and combine.
Form 4 patties.
Bake at 400 degrees for about 20 minutes, then flip and bake for another 8-10 minutes.
