Rocky Road Bites

Ingredients

  • 300g vegan chocolate
  • 100g vegan butter
  • 1 tbsp maple syrup
  • 50g salted popcorn, crushed
  • 2 tbsp dried cranberries
  • 2 tbsp pistachio kernels, chopped
  • 2 tbsp freeze dried raspberries

Preparation

  1. Break up the chocolate and melt in a pan over a medium heat. Add in the butter and maple syrup and keep stirring until fully melted and combined. Remove from the heat and stir in the cranberries and crushed popcorn. Then add 3/4 of your pistachios and raspberries. They should all be fully coated with the chocolate mixture

  2. Grease a small baking tray and add in the mixture. Sprinkle on top the remaining pistachios and raspberries. Pop in the fridge for at least an hour. Once set, slice into bars and enjoy
