Served with Tortilla Wraps, Bowls of Lettuce, Chopped Avocado, Cheese and Greek Yoghurt

Ingredients

  • auté 1 onion in a little olive oil. Add 2 cloves of garlic, 1 tsp each of tumeric, ginger, paprika, cumin
  • Add chicken if you are using it. You could use tofu or beans for a #plantbased version
  • Add chopped veggies. I used fresh peppers and then a mixed selection of frozen veg to encourage the toddler to eat it. She loves peas and sweetcorn
  • Next it’s 1/2 (200g) chopped tomatoes, 1tbsp tomato purée and lemon juice. Simmer. Add more tomatoes if needed but you don’t want it too saucy
  • I served with tortilla wraps, bowls of lettuce, chopped avocado, cheese and Greek yoghurt. Then dive in
