S'mores Mug Cakes

Ingredients

  • 1 egg and 1 egg white
  • 3 tablespoons coconut flour
  • 1/3 cup unsweetened almond milk
  • 1 1/2 teaspoons coconut sugar (optional to add more for sweetness)
  • 1/2 teaspoon baking powder
  • 1 1/2 tablespoons chocolate chips
  • 1 crushed graham cracker
  • 2 marshmallows (optional)

Preparation

  1. In a bowl, whisk together 1 egg and 1 egg white.

  2. Add 3 tablespoons coconut flour, 1/3 cup unsweetened almond milk, 1 1/2 teaspoons coconut sugar, and 1/2 teaspoon baking powder, then mix well.

  3. Fold in 1 1/2 tablespoons chocolate chips and 1 crushed graham cracker, and mix everything together.

  4. Transfer the mixture to two small greased ramekins or one medium ramekin.

  5. Optionally, add 2 marshmallows on top before microwaving, or toast them in a skillet for a minute and add after.

  6. Microwave for 2 1/2 to 3 minutes and enjoy.
