S'mores Mug Cakes
Ingredients
- 1 egg and 1 egg white
- 3 tablespoons coconut flour
- 1/3 cup unsweetened almond milk
- 1 1/2 teaspoons coconut sugar (optional to add more for sweetness)
- 1/2 teaspoon baking powder
- 1 1/2 tablespoons chocolate chips
- 1 crushed graham cracker
- 2 marshmallows (optional)
Preparation
In a bowl, whisk together 1 egg and 1 egg white.
Add 3 tablespoons coconut flour, 1/3 cup unsweetened almond milk, 1 1/2 teaspoons coconut sugar, and 1/2 teaspoon baking powder, then mix well.
Fold in 1 1/2 tablespoons chocolate chips and 1 crushed graham cracker, and mix everything together.
Transfer the mixture to two small greased ramekins or one medium ramekin.
Optionally, add 2 marshmallows on top before microwaving, or toast them in a skillet for a minute and add after.
Microwave for 2 1/2 to 3 minutes and enjoy.
