Vegan Lemon Cream Topping with French Toast

Ingredients

Lemon cream topping

  • 1 can chilled coconut milk
  • 1 scoop plant strong vanilla or unflavoured
  • 2 tsp maple syrup
  • 1 tsp lemon juice
  • 1/2 cup lemon zest

French toast

  • 1 1/2 Tbsp chia seeds
  • 1/2 Tbsp agave nectar or maple syrup
  • 1 cup unsweetened almond milk
  • 1/2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 4-5 slices bread

Preparation

  1. Whisk the lemon cream ingredients until fluffy.

  2. Soak the bread evenly on both sides in the French toast mixture.

  3. Cook in a non-stick pan on medium heat until golden brown.
