Vegan Lemon Cream Topping with French Toast
Ingredients
Lemon cream topping
- 1 can chilled coconut milk
- 1 scoop plant strong vanilla or unflavoured
- 2 tsp maple syrup
- 1 tsp lemon juice
- 1/2 cup lemon zest
French toast
- 1 1/2 Tbsp chia seeds
- 1/2 Tbsp agave nectar or maple syrup
- 1 cup unsweetened almond milk
- 1/2 tsp ground cinnamon
- 1/2 tsp vanilla extract
- 4-5 slices bread
Preparation
Whisk the lemon cream ingredients until fluffy.
Soak the bread evenly on both sides in the French toast mixture.
Cook in a non-stick pan on medium heat until golden brown.
