Vegan Raspberry Crumble Bars
Ingredients
- 1/2 cup vegan butter, melted
- 3/4 cup brown coconut sugar
- 1 tsp Madagascar vanilla
- 1/2 tsp almond extract
- 1 cup + 2 tbsp gluten-free all-purpose flour
- 3/4 cup gluten-free rolled oats
- 1/4 tsp cinnamon
- pinch of salt
- 8 oz raspberry jam
- lemon zest
- sliced almonds
- more oats for sprinkling
Preparation
Preheat oven to 350 degrees.
Line an 8x8 inch glass baking dish with aluminum foil and spray with coconut oil. Set aside.
Combine the first four ingredients in a large bowl using a hand mixer until well mixed.
Add the next four dry ingredients to the bowl and mix to combine.
Reserve 1 cup of dough and set aside. Press the remaining dough into the bottom of the 8x8 inch dish using hands or a spoon or spatula.
Spread jam evenly on top.
Sprinkle with lemon zest and sliced almonds.
Crumble the remaining dough on top and sprinkle with extra oats.
Bake for 22-25 minutes.
