Raspberry Oatmeal Breakfast Bars

Ingredients

Crust

  • 3/4 cup almond flour
  • 1 cup oats
  • 1/2 cup coconut sugar
  • 1/2 tsp baking powder
  • dash of salt
  • 1/4 cup vegan butter

Filling

  • 2 1/2 cup raspberries
  • 3 tbsp coconut sugar
  • 2 tbsp cornstarch
  • 4 tbsp lemon zest
  • 1/4 tsp vanilla

Top layer

  • 1/3 cup almond flour
  • 1/2 cup oats
  • 1/4 cup coconut sugar
  • 1/4 tsp baking powder
  • dash of salt
  • 3 tbsp vegan butter

Preparation

  1. Start by combining all of the ingredients for the crust in a large bowl and mixing them well then transfer the mixture to a square baking pan

  2. To create your raspberry filling, crush up your raspberries and add the rest of the ingredients until everything is well combined add the filling to the baking pan and shake the pan to make sure it is evenly distributed

  3. Finally, mix your ingredients for the top layer and sprinkle it on top of the raspberry layer

  4. Bake your raspberry oat bars for 40-50 minutes at 400*F, or until the top layer is golden brown

  5. Let the bars cool, cut them up and enjoy
