Soft and Chewy Almond Flour Oatmeal Cookies
Ingredients
- 1 egg
- 1/3 cup avocado oil (optional to add 1 tbsp more if batter is too dry)
- 1 tsp vanilla
- 1/2 cup coconut sugar
- 1 cup oats (sprouted gluten-free recommended)
- 1 cup almond flour
- 1 tsp baking soda
- a sprinkle of sea salt
Preparation
Preheat oven to 350°F.
Combine 1 egg, 1/3 cup avocado oil, 1 tsp vanilla, and 1/2 cup coconut sugar.
Stir in 1 cup oats, 1 cup almond flour, 1 tsp baking soda, and a sprinkle of sea salt.
Scoop cookie dough onto a cookie sheet lined with parchment paper and form into round shapes.
Bake for 18-20 minutes.
Tips
Do not over bake; they will harden as they cool.
