Soft and Chewy Almond Flour Oatmeal Cookies

Ingredients

  • 1 egg
  • 1/3 cup avocado oil (optional to add 1 tbsp more if batter is too dry)
  • 1 tsp vanilla
  • 1/2 cup coconut sugar
  • 1 cup oats (sprouted gluten-free recommended)
  • 1 cup almond flour
  • 1 tsp baking soda
  • a sprinkle of sea salt

Preparation

  1. Preheat oven to 350°F.

  2. Combine 1 egg, 1/3 cup avocado oil, 1 tsp vanilla, and 1/2 cup coconut sugar.

  3. Stir in 1 cup oats, 1 cup almond flour, 1 tsp baking soda, and a sprinkle of sea salt.

  4. Scoop cookie dough onto a cookie sheet lined with parchment paper and form into round shapes.

  5. Bake for 18-20 minutes.

Tips

  1. Do not over bake; they will harden as they cool.
