Peppermint Chocolate Paleo Cookies
Ingredients
- 1/3 cup avocado oil (Chosen Foods or olive oil)
- 1 egg
- 1 tsp vanilla
- 1/2 cup coconut sugar (Wholesome Sweet)
- 2 cups almond flour
- 1 tsp baking soda
- Sprinkle of sea salt
- Peppermint chocolate (Little Secrets Co)
Preparation
Preheat the oven to 350°F (175°C).
In a bowl, whisk together the wet ingredients: avocado oil, egg, and vanilla.
Add coconut sugar to the wet mixture and combine well.
Gradually add almond flour and baking soda to the same bowl, mixing until a dough forms.
Fold in pieces of peppermint chocolate into the dough.
Roll the dough into small balls and place them on a lined cookie sheet.
Gently press down on each ball to slightly flatten.
Bake the cookies in the preheated oven for 12 minutes.
Once baked, remove the cookies from the oven and allow them to cool.
