Homemade Chipotle-Inspired Chicken Bowl

Ingredients

Chicken

  • 2 chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tbsp taco seasoning

Veggies

  • 2 bell peppers
  • 1 onion
  • 1 tsp garlic powder
  • 1/2 tbsp taco seasoning (e.g., Primal Palate)
  • 1/2 tsp chipotle powder (optional)
  • 2 tbsp olive oil

Others

  • 1/4 cup salsa
  • 1 15-ounce can black beans
  • Rice (cauliflower rice can be used)
  • Romaine lettuce
  • 1 avocado 🥑

Preparation

  1. Heat a skillet over medium heat.

  2. Cut the chicken breasts into nugget-sized pieces.

  3. Add olive oil to the skillet.

  4. Add the chicken pieces and sprinkle with garlic powder and taco seasoning.

  5. Cook the chicken for 3-4 minutes on each side. Once cooked, remove and set aside.

  6. Cut the bell peppers and onion into slices.

  7. Add olive oil to the skillet.

  8. Add the sliced bell peppers and onions, then sprinkle with garlic powder, taco seasoning, and chipotle powder (if using).

  9. Cook the veggies for 8-10 minutes until they are tender.

  10. Add the cooked chicken back into the skillet with the veggies.

  11. Stir everything together to combine.

  12. Pour in 1/4 cup of salsa and stir to mix.

  13. In a separate bowl, combine all the other ingredients, including black beans, rice, romaine lettuce, and avocado, as you would when assembling a bowl at Chipotle.
